Vegan Shortbread Cookies

This recipe creates tender, crumbly cookies rich with flavour.

It’s always too easy to whip up a batch of these. I always try and convince myself I will have just one but inevitably eat at least four…
I genuinely started giving these cookies away to neighbours just so I wouldn’t be tempted to finish the whole batch (no judgment if you keep the cookies for yourself).
Most people would argue that shortbread cookies need butter but I am here to prove them wrong. These cookies truly taste authentic to the shortbread cookies made with butter.

make around 12 cookies (depending on cookie cutter)
INGREDIENTS:
2 1/4 cups almond flour
1/4 cup arrowroot powder
1/4 teaspoon salt
1/4 cup maple syrup
1/2 cup palm shortening (can sub for butter), cut into pieces
INSTRUCTIONS:
In a bowl of a stand mixer with a paddle attachment, combine the almond flour, arrowroot powder, and salt. Once incorporated, add the maple syrup for 15 - 20 seconds. You want it to be crumbly.
Add palm shortening, spacing it out around the bowl. Mix on medium speed until it forms a dough and all the ingredients are combined. Form the dough into a disk and wrap tightly with plastic wrap. Chill in the refrigerator for at least 2 hours.
Once the dough has chilled, preheat the oven to 350F/175C. Line a baking sheet with parchment paper. Set aside.
Unwrap the dough and place it between two pieces of parchment. Using a rolling pin, roll the dough out until it's about 1/2 inch thick. Using a cookies cutter, cut dough and place on the baking sheet with parchment paper. Repeat this step until all the dough is used up. Place cookies bake in the fridge for 15 minutes.
Once chilled, bake the cookies for 10 - 14 minutes or until the cookies are slightly golden on the outside. Remove cookies from the oven and allow them to cool on the baking sheet completely before serving. Enjoy!
The cookies can be stored in an airtight container on the counter for up to 5 days.
