The Cookie Everyone Needs in Their Life

There’s nothing better than baking chocolate chip cookies from scratch and filling your whole house with that irresistible smell.


Think chewy centres, melted dollops of dark chocolate chips and crispy edges punctuated with a satisfying crunch. You know you need these cookies in your life.


These cookies use maple sugar to get the perfect sweetness that is most related to the traditional chocolate chip cookie. If you don't have access to maple sugar, don't fret. Coconut sugar is a great alternative that won’t let you down.


I typically a 70% dark chocolate bar and chop it into chunks. If you prefer your cookies to be on the sweeter side, you can substitute for a lower percentage chocolate.


These cookies are gluten-free, grain-free, dairy-free and refined sugar-free – making them one of my go-to desert recipes.


These are sure to make your cookie dreams come true.


Pro tip: It’s a good idea to double the recipe because these cookies tend to be a hit with family and friends!

INGREDIENTS:

  • 1 cup almond flour

  • 1/4 cup coconut flour

  • 1 teaspoon baking soda

  • 1/4 teaspoon salt

  • 3/4 cup paleo chocolate chip (or a chocolate bar chopped up)

  • 3/4 cup maple sugar or coconut sugar

  • 1/4 cup + 2 tablespoons coconut oil

  • 1/4 cup + 2 tablespoons almond butter

  • 1 egg

  • 1 1/2 teaspoon vanilla extract


INSTRUCTIONS:

  1. Preheat the oven to 350F/175C. Line a baking tray with parchment paper and set aside.

  2. In a medium bowl, sift together almond flour, coconut flour, baking soda, salt and chocolate chips

  3. In a large mixing bowl with an electric hand mixer or using a stand mixer, beat together the sugar and coconut oil for about 2 - 3 minutes until the mixture is light and fluffy.

  4. Add the almond butter, egg, and vanilla extract to the sugar mixture and beat until all the ingredients come together. This should take about a minute or two.

  5. Add in all the dry ingredients and using a spatula combine all the ingredients together until the dry mixture is no longer viable and you have a cookie dough.

  6. Scoop 10 cookies and roll them in a ball. Place the cookies on the baking tray and press them down.

  7. Bake for 10 -12 minutes, or until the outer edge starts to turn golden brown. Take the cookies out of the oven and let them cool for a few minutes before transferring them to a wire rack. Enjoy!
