Homemade Mayonnaise

You will never see me buying mayo. I find that most brands use unhealthy oils or add additives to make the product last long. Making homemade mayo is actually a lot easier than I thought and it tastes better than the packaged stuff.
I love this recipe becuase you can also make it your own. If you don't like garlic, leave it out. If you want to make a flavoured mayo add herbs or spices. You can even add honey to make a honey mayo. The options are endless once you have the base.
Most recipes you see online will use just the yolk. I hated wasting the whites so I tried this recipe with a whole egg. It produces a mayo that is a little more liquid than one with just the yolk but it doesn't effect the taste and this way you don't need to waste part of the egg!
It can last in the fridge for up to 10 days but mine never seems to last more than a few days.

homemade mayonnaise
about 1 cup
INGREDIENTS:
1 egg
1/2 teaspoon lemon juice or apple cider vinegar
1/4 teaspoon salt
About 1 cup olive oil
1/2 - 1 cloves of garlic, minced
INSTRUCTIONS:
Place egg, lemon juice, and mustard in the bottom of cup or jar that just fits the head of your immersion blender. The egg/lemon juice mixture must reach the blades for this to work so make sure the jar is the proper size.
Using the immersion blender, blend this for 20 seconds or until everything comes together.
Place your stick blender in the jar and press it firmly to the bottom. Turn it on angle it a bit at the bottom of the jar. Turn the blender on and SLOWLY drizzle the oil on the side of the jar. This is super important. It takes time but it is worth it. You want the oil to move down the side of the jar at almost a snail pace.
Once the mayonnaise starts to emulsify and thicken, slowly move the stick blender up and down to fully combine the ingredients. Once thickened, add in the garlic if use and blend again. Taste the mayonnaise and if it needs more acidity, salt, or flavouring adjust accordingly.
Once it's all blended, remove the stick blender. Give it a few stirs with a spoon and place in a storage container in the refrigerator. It will stay fresh for up to one week.
