Why choose between a brownie or a pie? Why not have both!

I feel like I don't need to go into a whole lot of detail about why you have to try this recipe. Brownies are delicious. Pies are delicious. The combination is out of this world!
This decadent brownie pie is super fudgy with the most luscious, rich chocolate flavour. Wrap that all up in a crispy pie crust and you have yourself the perfect pie!

decadant brownie pie
makes 1 9" pie
INGREDIENTS:
Crust
1 1/2 cups almond flour
3 tablespoons coconut flour
1/4 teaspoon baking powder
1/4 teaspoon salt
1/4 cup grass-fed organic butter, melted
1 large egg
Filling
50 g cacao powder
104 g monk fruit (or coconut sugar)
1 tsp baking soda
1/2 teaspoon salt
260 g almond butter (can use cashew butter as well)
2 tablespoon coconut oil, melted
1 egg, room temperature
1/2 cup coconut milk, room temperature
1 teaspoons vanilla extract
INSTRUCTIONS
Preheat your oven to 175C / 350F.
In a large bowl, whisk together the dry ingredients for the crust - almond flour, coconut flour, baking powder, and salt. Add in melted butter and egg. Stir until a dough forms. Press the dough evenly into a 9" pie pan, then use a fork to poke holes all over the crust. Put the crust in the fridge for 30 minutes to chill.
Once the crust has been in the fridge for 30 minutes, bake in the oven for 10 minutes.
While you are waiting for the crust to bake, you can make your pie filling.
In a medium bowl, sift together the cacao, monk fruit, baking soda, and salt. Set aside.
In the bowl of a stand mixer, add the almond butter, coconut oil, egg, coconut milk, and vanilla extract and whisk until just incorporated. Add the dry ingredients and whisk on low just until the dry and wet ingredients are incorporated and there are no lumps left.
Once the filling is done, pour the filling into the crust and spread evenly. Bake the pie in the oven for 16 - 20 minutes. You want the pie to still have a slight jiggle in the middle. Do not over bake the pie. You will want to keep a close eye on the pie for the last five minutes. Take out of the oven and let cool completely.
Enjoy!
