The cookie you don't have to feel bad for being addicted to.


Most people think that desserts and health don’t go hand in hand. We often think of sweet treats as something that are “bad” for us or that we need to feel guilty about including them in our diets. I am here to say that we should get rid of this idea and that eating desserts can be beneficial for you.

I agree that we should be mindful about the sugar we consume and what goes into our food. We need a balanced diet to make sure that we have all the nutrients required to live a healthy, long, thriving life. Food has healing properties BUT it’s not only exclusive to savoury options. You can have your cake and eat it too!


Here is where the Beauty Cookie comes in! The name of this cookie definitely doesn't describe the look of the cookies themselves but rather the benefits of the cookie. This recipe if full of ingredients that have a ton of benefits that known for increasing collagen, reducing inflammation, and protects against aging


I know, I know. It might be hard to believe that a cookie can do all of this and taste AMAZING! But below is the breakdown of what ingredients are in the cookie and how they are good for you on the inside and out.


Tahini:

When it comes to nutrient density, tahini has a lot going for it. It is high in copper, manganese, magnesium, folic acid, niacin, pyridoxine thiamin, riboflavin calcium, and selenium. Tahini also contains iron and zinc which play a beneficial role for healthy skin, hair, and nails.

Tigernut Flour:

Tigernut flour is rich in iron, potassium, zinc, and magnesium. It has a rich source of antioxidants that can protect against aging and disease. If we are talking about beauty from the inside out then we can't forget about the high fibre and resistant starch content that tiger nut flour has which feeds the good bacteria in the gut.


Maca:

Maca is an amazing source of protein and is rich in Vitamin C, D, & E. Protein plays a major role in keeping your hair shiny and your nails strong. Vitamin C, D, & E all work to regulate collagen production that can help with skin damage and inflammation.


Pumpkin seeds:

Pumpkin seeds have the wonderful ability to clean and regenerate the skin, protects your cell membranes, and helps maintain collagen. They can do all of that because they contain a great amount of skin-friendly components like vitamins A and E, zinc, selenium and essential fatty acids.


Collagen:

Collagen is a major component of your skin. The more you age, the less you produce. Even though maca and pumpkin seeds have connections with increasing collagen production, it doesn't hurt to add a little more of pure collagen to this cookie. (If you want to keep these cookies vegan, feel free to omit the collagen).

Above are 5 great reasons why you should run and not walk to the grocery store to buy all of the ingredients to make these health beneficial cookies. But if you still need convincing, these cookies are free from:

  • gluten

  • grains

  • dairy

  • eggs

  • refined-sugar

  • soy

  • legumes

What more could you ask for. A cookie that meets anyone dietary lifestyle, is good for your beauty, and that is absolutely delicious!

makes 7 cookies

INGREDIENTS:

  • 3 tablespoon water

  • 1 tablespoon chia seeds

  • 1/2 cup tigernut flour, sifted

  • 1/2 cup coconut sugar

  • 1 teaspoon baking powder

  • 1/8 teaspoon salt

  • 1/2 teaspoon cinnamon

  • 1 tablespoon maca

  • 1 tablespoon collagen

  • 2 tablespoon pumpkin seeds

  • 1/2 cup + 3 tablespoons tahini

  • 1/2 teaspoon vanilla extract

INSTRUCTIONS:

  1. In a small bowl, whisk water and chia seeds together and set aside for 8 minutes.

  2. Preheat your oven to 325 degree and line a baking sheet with parchment paper and set aside.

  3. In a medium bowl, combine the tiger nut flour, coconut sugar, baking powder, salt, cinnamon, maca, collagen, and pumpkin seeds. Make sure everything is combined and you sifted the tiger nut flour.

  4. Add the tahini, vanilla extract and chia seed mixture to your dry ingredients. Using a spatula or your hands, combine all the ingredients.

  5. Using your hands or a spoon, make 7 cookies. Roll them in your hand and place them on the baking sheet and press down.

  6. Bake the cookies for 10 - 11 minutes or until slightly golden brown.

  7. Take the cookies out of the oven and let cool for 15 minutes. Enjoy!

  8. To store these cookies, place them in an airtight container. They will last in the fridge for 8 days and in the freezer for 3 months.
