Addicting Coconut Granola

This recipe is the ultimate snack!! It’s sweet and salty, slightly chewy yet deliciously crunchy and FULL of flavour.
This granola is paleo-friendly, grain-free, gluten-free, dairy-free, free of refined sugars and vegetarian with a vegan option. Simply substitute maple syrup for the honey.
But best of all, it’s easy to make! Just stir together the dry ingredients, drizzle in the wet ingredients, and mix it all together. Bake for 16 minutes, and it’s ready to go.
You can eat the granola by itself or add it to yogurt, chia pudding, ice cream, even sprinkle it on a cake to give it texture or gift it to someone in your life.

addicting coconut granola
INGREDIENTS:
2 cups coconut flakes
1/2 cup omega-3 seed mix (sunflower seeds, pumpkin seeds, and/or flaxseeds)
1/4 cup cacao nibs
1 teaspoon cinnamon
1/2 teaspoon ginger
1/4 teaspoon turmeric (can omit)
1/2 teaspoon salt
1/4 cup coconut oil
1 tablespoon honey (can sub for maple syrup to make vegan)
1 tablespoon maple syrup
INSTRUCTIONS:
Preheat your oven to 175c/350F and line a baking sheet with parchment paper. Set aside.
In a medium size bowl, the coconut flakes, seed mix, cacao nibs, cinnamon, ginger, turmeric and salt together.
In a pot over low heat, melt together the coconut oil, honey, and maple syrup. Once melted, pour in the bowl with the dry mixture and combine.
Spread the granola mixture on a baking sheet lined with parchment paper. Bake for 8 minutes. Take the baking sheet out of the oven and stir the granola around. Place back in the oven and bake for another 5 - 7 minutes until the coconut flakes are nice and golden brown.
Let the granola cool completely and enjoy!!
