The Best Vegan Banana Bread

This ‘tried and true’, classic vegan banana bread is moist, healthy, customizable, and SO DAMN GOOD.
This recipe is free from gluten, eggs, dairy, refined sugar, soy and legumes making an easy go-to recipe when having anyone over.
It’s all about the bananas! The trick is to use very ripe, freckled bananas, because the riper your bananas are, the more flavour it will add to the bread.
Jazz up your banana bread with additional add-ins and toppings! Fold in chocolate chips, walnuts, pecans, cacao nibs, or anything else that is hiding in your cabinets.

1 loaf
INGREDIENTS:
1 tablespoon chia seeds
2 1/2 tablespoon water
100g gluten free flour
200g ground almonds
100 gluten free oats
2 teaspoon baking powder
1 tsp cinnamon
1 tsp salt
2 ripe bananas
3 tablespoons maple syrup
100g coconut sugar
100ml melted coconut oil
200ml coconut milk or any alternative milk (no additives)
2 teaspoons vanilla
Chocolate Spread
1 tablespoon cacao powder
1 tablespoon almond flour
1 tablespoon coconut sugar
2 1/2 tablespoon coconut milk or any alternative milk (no additives)
INSTRUCTIONS:
Preheat the oven to 170C/340F. Line a bread pan with parchment paper and set aside.
In a small bowl, combine chia seeds and water and set aside.
In a medium bowl, combined gluten free flour, almond flour, oats, cinnamon, baking powder, and salt. If you are adding anything else to your loaf, this is the step where you would add your nuts, chocolate, cacao nibs, etc.
In a bowl of a stand mixer (or you can use a hand mixer), add the bananas and mix for a minute or two until they are mashed. Add in coconut sugar, maple syrup, vanilla, and coconut oil and whisk for about 30 - 60 minutes or until everything is combined.
While the mixer is on, add the milk in 3 stages, mixing fully in-between each stage.
Add in the dry mixture to the bowl and fully combined.
Pour the mixture in the loaf pan and spread the top flat.
In a small bowl, combine all the chocolate spread ingredients until there are no clumps left. Pour over the top of the loaf and spread evenly.
Bake loaf for 1 hour and 15 minutes or until set. Take the loaf out of the oven and let cool completely. Enjoy!
